an enzyme which breaks down fats into one glycerol molecule and three fatty acid chains
active site
the part of the enzyme which is responsible for binding and breaking down the substrate.
lock and key theory
the theory that the enzyme signifies a lock and the substrate a key which is specific to that lock.
