When we talk, we are vibrating the air as it passes out of our lungs. We force air between the two vocal cords in our voice box, causing them to vibrate. Muscles attached to the vocal cords can make the cords tight or loose. When the vocal cords are pulled tighter, the sound produced is higher pitch.
